Our good plans – July 2023

Restaurants

A simple restaurant with one golden rule: consume more responsibly by cooking only seasonal produce. It’s better for taste and better for the planet!

Everything is 100% homemade, in a joyful, cheerful atmosphere. Mayo, rillettes, even bisques and meat juices… they cook it all on the spot. Eat locally with quality French produce (some 50 partner producers).

At ACÀ, in the epicenter of Parisian luxury, all the senses are on alert. Mexican cuisine, exuberant and festive, its angry chillies invite you to get drunk, its sliced flavours to share… Forget propriety, you’ll have your fingers full of it!

« Mi casa es tu casa ». ACÀ is our home, welcome!

Le Grand Vacarme is housed in the Grand Quartier hotel in Paris’s 10th arrondissement. In this astonishing place, close to the Gare de l’Est station, young chef Sarah Mainguy offers a cuisine with a strong focus on plants.

But not vegetarian: cabbage ravioli with smoked whelk tartar, green bean salad with anchovies and ribot milk, sole with elderberry butter and almond slivers…

Just a stone’s throw from Les Halles and on a quieter street in the Montorgueil district, bistro owner Charles Compagnon opened his third establishment last year, all decked out in Basque red and pink. These color codes are deployed on the pretty terrace, where you can feast on well-crafted small plates for aperitifs, and original dishes for lunch or dinner…

Meat with asparagus and crab bisque, lamb with haddock and peas, before finishing off with delicate homemade ice creams and an excellent coffee roasted by the master of Courance.

Inspired by the bodegas and taverns of northern Spain, you can come here for a glass of house vermouth and finger-licking Iberian cured meats, or stay all night for tapas and bottles of Catalan wine.

Catalan chef Sylvain Roucayrol from Ceret has created a menu in the colors of his homeland. He mixes classic dishes such as the bomba de barceloneta or tortilla from his childhood with more free-spirited and inspired dishes, but always in the Catalan vein. The choice of products is also a central concern, with the emphasis always on the latter.

Around Laurent Frechet, owner of the establishment and many other gastronomic addresses in Paris, an incubator of talent is working to achieve this perfect balance. While Laurent is a true connoisseur of places, a finder of talented chefs and a counter of great stories, his architect wife creates spaces with a unique cachet, while his brother Jean-Marie goes out to meet winemakers in search of the ideal wine, and his partner Thomas Chaput and manager Éric Grivot each in their own way distill that je-ne-sais-quoi in the dining room that makes you feel good at Pirouette.
